Disco Jalisco became an idea when we started playing with our recipes during CRAZY taco Tuesdays at Tomaso’s Canteen. That grew into our food truck, where we play with street tacos and other fun things of the same nature. Blending Mexican, Maine, and a bit of Japanese cuisine into what we do….and we like dancing too.
